Chipotle Chicken Tacos with Pineapple Salsa

A spicy, smoky chicken filling in soft tortillas, this moreish, low-calorie dinner is on the table in just 20 minutes.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the oil in a large saucepan. Add half the onion and the chicken mince. Season well and cook for about 5 mins on a high heat to brown, breaking up the meat with a spoon. Add the spices, vinegar, chipotle paste, passata and sugar. Cook for another 5 mins, then remove from the heat.

Step 2

In a small bowl, mix the remaining onion, the pineapple and coriander. Serve the chicken and the pineapple salsa with warm tortillas and hot sauce.

  • 2 tbsp Soft Brown Sugar 1x Sainsbury's Fairtrade Light Soft Brown Sugar 500g
  • 2 tbsp Cider Vinegar 1x Sainsbury's Cider Vinegar 500ml
  • 0.5 Small Pineapple, cored, peeled and chopped 1x Sainsbury's Pineapple
  • 2 tsp Sweet Smoked Paprika 1x Sainsbury's Smoked Paprika 44g
  • 200ml Passata 1x Sainsbury's Passata 500g
  • 500g Chicken Mince, or turkey mince 1x Sainsbury's British 6% Fat Chicken Mince 500g
  • 1 tbsp Vegetable Oil 1x Sainsbury's Vegetable Oil 1L
  • 1 Corn or Flour Tortillas 1x Sainsbury's Plain Tortilla Wraps x8 496g
  • 2 tsp Ground Cumin 1x Sainsbury's Ground Cumin 43g
  • 1 tbsp Chipotle Paste, plus more, if you like a little heat 1x Sainsbury's Spicy Chipotle Chilli Paste, Inspired to Cook 90g
  • 1 Medium Onion, chopped 1x Sainsbury's Red Onions Loose
  • 2 tsp Hot Sauce, to serve 1x Tabasco Mild Green Hot Pepper Sauce 57ml
