Halloumi Aubergine Burgers with Harissa Relish

A veggie stack with a difference - flavour your fried cheese with Moroccan harissa paste and creamy hummus

Method

Based on 4 servings, adjust as needed.

Step 1

Add a drizzle of the oil to a pan and tip in the onions. Cook over a high heat for a few mins, then turn down the heat and cook until soft and golden – about 8 mins.

Step 2

Meanwhile, heat another drizzle of oil and fry the aubergine for a few mins on each side until tender. Set aside. In a last drizzle of oil, fry the halloumi until golden.

Step 3

Tip the brown sugar, pepper and harissa into the onions. Cook for 1 min until the sugar has melted. While the relish is cooking, spread the rolls with hummus, laying halloumi and aubergine slices on top. Spoon the sticky, spicy relish over and serve.

  • 1 tbsp Soft Brown Sugar 1x Sainsbury's Fairtrade Light Soft Brown Sugar 500g
  • 2.5 tbsp Olive Oil 1x Sainsbury's Olive Oil 250ml
  • 4 tbsp Hummus 1x Sainsbury's Houmous 200g
  • 0.5 Aubergine, cut into thin round slices 1x Sainsbury's Aubergine
  • 1 block of Halloumi Cheese, cut into 8 slices 1x Sainsbury's Cypriot Halloumi Cheese 225g
  • 4 Ciabatta, rolls, halved and lightly toasted 1x Sainsbury's Stonebaked Ciabatta Rolls x4
  • 1 Roasted Red Pepper, from a jar, chopped 1x Karyatis Roasted Red Peppers 450g (350g*)
  • 2 Onions, very finely sliced 1x Sainsbury's Onions Loose
  • 2 tsp Harissa 1x Sainsbury's Harissa Paste, Inspired to Cook 90g
