Hearty Pasta Soup

Do something different with a pack of tortellini. This filling soup is full of fibre and veg, plus it's low in fat. The perfect lunch or supper

Method

Based on 4 servings, adjust as needed.

Step 1

If having garlic bread, heat the oven and cook according to instructions on the back of the pack.

Step 2

Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas with 5 mins to go.

Step 3

Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread, if you're having them.

  • 250g Fresh Filled Tortellini 1x Sainsbury's Spinach & Ricotta Tortelloni 300g
  • 1l Vegetable Stock 1x Knorr Stock Cubes Vegetable 8x10g
  • handful of Basil Leaves 1x Sainsbury's Fresh Packed Basil 30g
  • 2 Carrots, chopped 2x Sainsbury’s Carrots Loose
  • 1 tbsp Olive Oil 1x Sainsbury's Olive Oil, Extra Virgin 250ml
  • 200g Frozen Peas 1x Sainsbury's Garden Peas 910g
  • Garlic bread, to serve 1x Sainsbury's Garlic Slices x9 270g
  • Grated Parmesan, (or vegetarian alternative), to serve 1x Sainsbury's Fresh Grated Parmigiano Cheese 60g
  • 1 Onion, finely chopped 1x Sainsbury's Onions Loose
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
