Lemon and Spinach Rice with Feta

Pack in spinach, feta and walnuts into this rice dish. It's bursting with nutrients, including vitamin K, which is important for our skin, hair and bones. Lovely as it is or served with grilled chicken, fish or courgettes.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the oil in a large pan over a medium heat and fry the onions and garlic for 10 mins, stirring often until softened.

Step 2

Tip in the rice, then the stock, frozen spinach and half each of the dill and lemon zest. Cover, reduce the heat to low and cook for 25 mins until the rice is tender.

Step 3

Scatter over the remaining dill and lemon zest, the nuts and feta, then gently toss together along with the lemon juice. Serve half of the rice straightaway with two lemon wedges on the side for squeezing over. Leave the rest of the rice to cool completely and keep chilled for up to three days. Reheat in the microwave until piping hot, then serve with the remaining lemon wedges.

  • 1 Lemon, zested, 1/2 juiced, 1/2 cut into 4 wedges 1x Sainsbury's Lemons
  • 60g Walnuts, chopped 1x Sainsbury's Walnuts, Halves 100g
  • 700ml Vegetable Stock 1x Knorr Stock Cubes Vegetable 8x10g
  • 400g Frozen Spinach 1x Sainsbury's Baby Whole Leaf Spinach 900g
  • 1 tbsp Extra Olive Oil 1x Sainsbury's Olive Oil, Extra Virgin 500ml
  • 2 Onions, finely chopped 2x Sainsbury's Red Onions Loose
  • 20g Dill, finely chopped 1x Sainsbury's Bunched Dill 20g
  • 200g Feta, crumbled 1x Sainsbury's Greek Feta Cheese 200g
  • 3 Garlic Cloves, sliced 1x Sainsbury's Garlic
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
