Meatball & Tomato Soup

Get three of your 5-a-day in one serving with this healthy, low-calorie tomato soup. The addition of meatballs and giant couscous means it's filling, too

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the oil in a saucepan. Fry the onion and peppers for 7 mins, then stir through the garlic and chilli flakes and cook for 1 min. Add the tomatoes, giant couscous and veg stock and bring to a simmer.

Step 2

Season to taste, then add the meatballs and spinach. Simmer for 5-7 mins or until cooked through. Ladle into bowls and top with the basil and some parmesan, if you like.

  • ½ small bunch of Basil 1x Sainsbury's Fresh Packed Basil 30g
  • 1 Onion, finely chopped 1x Sainsbury's Onions Loose
  • 1½ tbsp Rapeseed Oil 1x Mazola Pure Rapeseed Oil 1L
  • 1 Garlic Clove, crushed 1x Sainsbury's Garlic
  • 500ml Hot Vegetable Stock 1x Knorr Stock Pot Vegetable 4x28g
  • 12 Meatballs 1x Sainsbury's British or Irish 10% Fat 12 Beef Meatballs 350g
  • Grated Parmesan, to serve 1x Sainsbury's Parmigiano Reggiano Cheese 200g
  • 100g Giant Couscous 1x Sainsbury's Giant Couscous 300g
  • 2 x 400g Chopped Tomatoes 2x Napolina Chopped Tomatoes 400g
  • ½ tsp Chilli Flakes 1x Sainsbury's Crushed Chillies 32g
  • 150g Baby Spinach 2x Sainsbury's Baby Leaf Spinach 100g
  • 2 Peppers, deseeded and sliced 2x Sainsbury's Red Pepper
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
