Mexican Chicken Burger

Ready in under 20 minutes, this burger with spiced chipotle chicken breast, in toasted brioche with guacamole, makes for a satisfying weeknight treat.

Method

Based on 4 servings, adjust as needed.

Step 1

Put the chicken breast between two pieces of cling film and bash with a rolling pin or pan to about 1cm thick. Mix the chipotle paste with half the lime juice and spread over the chicken.

Step 2

Heat a griddle pan over a high heat. Once hot, cook the chicken for 3 mins each side until cooked through, adding the cheese for the final 2 mins of cooking. Add the buns, cut-side down, to the griddle pan to toast lightly or pop them in the toaster. Season the chicken.

Step 3

Meanwhile, mash the avocado with the remaining lime juice. Stir in the cherry tomatoes, jalapeño and garlic, and season with a little salt. Spread over the base of the buns, then add the chicken followed by the top of the buns.

  • 1 slice Cheese, per person, or 2 slices if you fancy 1x Sainsbury's British Medium Cheddar Cheese Slices 240g
  • 8 Cherry Tomatoes, chopped 1x Sainsbury's Cherry Tomatoes 300g
  • 4 Chicken Breasts 1x Sainsbury's British Fresh Chicken Breast Fillets Skinless & Boneless 640g
  • 4 Brioche Buns, split 1x Sainsbury's Brioche Burger Buns, Taste the Difference x4
  • 4 Limes, juiced 4x Sainsbury's Limes
  • 4 tsp Chipotle Paste 1x Very Lazy Chipotle Paste 115g
  • Maldon Salt to taste 1x Maldon Sea Salt Flakes 250g
