Mussels in Red Pesto

Mussels are full of omega-3, iron and protein - try yours cooked in red pesto and wine

Method

Based on 1 servings, adjust as needed.

Step 1

Heat the oil in a large pan and cook the shallot for 4-5 mins until softened. Pour in the wine, add the chilli flakes and bubble for 2 mins.

Step 2

Add the mussels. Cover and cook for 5 mins until all the shells have opened. Discard any that remain closed. Stir in the red pesto and toss well. Tip into a large bowl and serve with crusty bread.

  • 1 Small Glass White Wine 1x Sainsbury's House Sauvignon Blanc (Small bottle) 18.7cl
  • 1 Shallot, finely chopped 1x Sainsbury's Echalion Shallots 400g
  • 1 tsp Olive Oil 1x Sainsbury's Olive Oil, Extra Virgin 250ml
  • 2 tbsp Red Pesto 1x Sainsbury's Pesto, Red 190g
  • 500g Clean Live Mussels 1x Sainsbury's Scottish Marine Stewardship Council MSC Mussels In White Wine 500g (Serves x2)
  • Pinch Crushed Chilli Flakes 1x Sainsbury's Crushed Chillies 32g
  • Crusty Bread, to serve 1x Sainsbury's White Bloomer Bread 400g
