Pineapple Fried Rice

Add chunks of fresh pineapple to fried rice to transform it into something special. Serve on its own for a family dinner, or as part of a Chinese banquet.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat half of the oil in a wok. Add the eggs, swirling them up the sides, to make a thin omelette. Once cooked through, roll the omelette onto a chopping board and cut into ribbons. 

Step 2

Heat the remaining oil. Add the crushed garlic, sliced springonions and five-spice. Stir-fry until sizzling, then add the rice (if using pouches, squeeze them first, to separate the grains), peas, sesame oil and soy. Cook over a high heat until the rice is hot, then stir through the pineapple and omelette ribbons.

  • 100g Spring Onions, sliced 1x Sainsbury's Spring Onions Bunch 100g
  • 0.5 tsp Chinese Five Spice, powder 1x Sainsbury's Chinese 5 Spice
  • 1 tbsp Sesame Oil 1x Sainsbury's Sesame Oil, Toasted 250ml
  • 400g Pineapple, fresh or tinned, drained weight 1x Sainsbury's Crownless Pineapple
  • 440g Cooked Long Grain Rice 2x Ben's Original Classic Long Grain Microwave Rice 220g
  • 4 tbsp Low Salt Soy Sauce 1x Sainsbury's Soy Sauce Reduced Salt 150ml
  • 150g Frozen Peas 1x Sainsbury's Garden Peas 910g
  • 1 tbsp Vegetable Oil 1x JS Sunflower Oil 1L
  • 3 Eggs, beaten 1x Sainsbury's British Free Range Eggs Medium x6
