Sausages, Roasted Veg and Puy Lentils

This one-pot wonder delivers three of your five-a-day and makes a fuss-free dinner solution on a busy day. With sausages, lentils and veg, it's filling too

Method

Based on 4 servings, adjust as needed.

Step 1

Prepare the peppers, courgettes, onions and garlic as instructed in the ingredients list. Heat grill to high.

Step 2

Put the sausages in a large roasting tin, drizzle with a little olive oil and grill for 8-10 mins until browning, then switch the oven on to 200°C/180°C fan/gas 6. Remove the tin from the grill and add the prepared vegetables and garlic, and drizzle over the remaining olive oil. Toss in the paprika and some seasoning.

Step 3

Roast for 30-35 mins more until the sausages and veg are mostly tender, then stir through the cooked lentils. Return to the oven for 5 mins until everything is heated through. Squeeze the garlic cloves out of their skins and stir the garlic into the lentils, then season to taste, stir through the chopped parsley and serve.

  • 2 Courgettes, sliced 2x Sainsbury's Courgettes Loose
  • 2 Pouches Tomatoey Puy Lentils 2x Merchant Gourmet Tomatoey French Puy & Green Lentils 250g
  • 1 tsp Smoked Paprika 1x Sainsbury's Smoked Paprika 44g
  • 30g Parsley, roughly chopped 1x Sainsbury's Fresh Packed Flat Leaf Parsley 30g
  • 1 Yellow Pepper, sliced 1x Sainsbury's Yellow Pepper
  • 2 Red Onion, sliced into thick slices 2x Sainsbury's Red Onions Loose
  • 2 tbsp Olive Oil 1x Sainsbury's Olive Oil 500ml
  • 1 Red Pepper, sliced 1x Sainsbury's Red Pepper
  • 3 Garlic Cloves, bashed in their skins 1x Sainsbury's Garlic
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
