Introducing our next-level “Hunter’s Chicken” burger, a twist on the pub classic! We’ve suggested using cheddar but feel free to swap for a different cheese if you already have some.
Based on 4 servings, adjust as needed.
Preheat your oven to 200°C / 180°C fan. Add 450g chips to a large baking tray and cook for 25-30 minutes, until golden.
Next bash 4 chicken breasts with a rolling pin to flatten, this will tenderise the meat and help it cook evenly. (Tip: it’s best to do this between two sheets of greaseproof paper.) Lightly season the chicken and wrap 3-4 strips of streaky bacon around each one, keeping the breasts flat.
Place the chicken on a baking tray and cook for 18-20 minutes, until the juices run clear.
Remove from the oven and spoon over 4 tbsp BBQ sauce and 100g grated cheddar. Return to the oven for 5 minutes, until bubbling and golden.
Now for the fun part! To build the burgers, spoon 1 tbsp garlic mayo on each burger bun, add the chicken (you might find it easier to cut in half first), 2-3 baby gem lettuce leaves and sandwich with the other half of the bun. Serve with the chips and an extra helping of aioli and BBQ sauce for dipping.
