BBQ season is fast approaching and what better way to celebrate it than with this totally delicious Plant-Based BBQ Veggie Burger. A doddle to throw together and totally perfect for the warmer weather that we're hoping to see!

Method

Based on 4 servings, adjust as needed.

Step 1

First, cook the Moving Mountains Burgers. Use a BBQ or follow the instructions on the packet. If serving your burgers with sweet potato fries, cook these now also, following the packet instructions.

Step 2

Next, add all the prepared vegetables (peppers, onion and courgettes) to a mixing bowl, drizzle with oil and season with salt. Mix with your hands until they are all covered evenly with oil. Place your vegetables under your grill or on your BBQ for 5-8 minutes, until they begin to soften, and get light charred marks.

Step 3

Whilst your burgers and veggies cook make your lemon mayo by combining the lemon zest and mayo in a bowl. Taste and season with a further squeeze of lemon, salt, and pepper.

Step 4

Once everything is cooked, assemble your burgers. Spread the mayo over both halves of the bread buns, add your lettuce leaves, burger patties and top with the grilled/ BBQ vegetables and your sweet potatoes fries (if using).

  • 1 Little Gem Lettuce, seperated and washed 1x Sainsbury's Little Gem Lettuce x2
  • 4 Moving Mountains Burgers 2x Moving Mountains 1/4lb Plant-Based Burgers 2x113.5g
  • 4 tbsp Vegan Mayo 1x Hellmann's Plant Based Vegan Mayonnaise 270g
  • 4 Vegan Brioche Burger Buns, halved 1x Schär Gluten Free Brioche Burger Buns 160g
  • 1 Courgette, thickly sliced on an angle 1x Sainsbury's Courgettes Loose
  • 1 Red Pepper, cored and quartered 1x Sainsbury's Red Pepper
  • 1 Red Onion, quartered and separated to ‘petals’ 1x Sainsbury's Red Onions Loose
  • 1 Lemon, zested, some juice 1x Sainsbury's Lemons
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
