BBQ season is fast approaching and what better way to celebrate it than with this totally delicious Plant-Based BBQ Veggie Burger. A doddle to throw together and totally perfect for the warmer weather that we're hoping to see!
Based on 4 servings, adjust as needed.
First, cook the Moving Mountains Burgers. Use a BBQ or follow the instructions on the packet. If serving your burgers with sweet potato fries, cook these now also, following the packet instructions.
Next, add all the prepared vegetables (peppers, onion and courgettes) to a mixing bowl, drizzle with oil and season with salt. Mix with your hands until they are all covered evenly with oil. Place your vegetables under your grill or on your BBQ for 5-8 minutes, until they begin to soften, and get light charred marks.
Whilst your burgers and veggies cook make your lemon mayo by combining the lemon zest and mayo in a bowl. Taste and season with a further squeeze of lemon, salt, and pepper.
Once everything is cooked, assemble your burgers. Spread the mayo over both halves of the bread buns, add your lettuce leaves, burger patties and top with the grilled/ BBQ vegetables and your sweet potatoes fries (if using).
