Vegetable fattoush salad is a Mediterranean salad that has small pieces of fried pitta bread mixed in that give the salad a delicious crunch
Based on 4 servings, adjust as needed.
Preheat the oven to 200°C/180°C fan. Place the diced onion, cucumber and tomatoes in a large bowl along with the lemon zest and the sliced radishes.
Slice the pitta into small triangles and toss together with 1/3rd the olive oil and half of the spice mix. Place the triangles onto a tray and place the tray into the oven to bake for 15 minutes until crispy turning halfway through. Remove from the oven and set aside.
Make the dressing by whisking together the remaining olive oil and remaining spice mix along with the lemon juice.
Pick the leaves from both the parsley and mint, roughly chop and stir through the chopped vegetables along with some seasoning. Dress the salad with the dressing and toss through the pitta pieces.
