Based on 4 servings, adjust as needed.
Preheat the oven to 180c. Chop the sweet potatoes, skin and all, into bitesize pieces (roughly 5x5cm). Toss in a little oil , then tip onto a tray and roast for 20 minutes.
While the sweet potato is roasting, trim the ends from the green beans and roughly chop ¾ of the coriander.
Bring a medium saucepan of water to the boil and add the rice. Give it a stir and add a lid and cook for 12-15 minutes or until cooked.
Place a large saucepan on a medium heat and add the coconut milk and 200ml water (if cooking for 4 people). Stir in the sachet of Thai Inspired Green Curry powder and once combined tip in the green beans. Simmer for 5 minutes then add in the cooked sweet potato pieces and chopped coriander.
Stir to coat the vegetables in the sauce and remove from the heat.
Drain the rice and portion between 4 bowls. Ladle over the curry and top with the remaining whole coriander leaves.
